16 oz. rhubarb, sliced
1/2 cup butter
3-1/2 oz. almond paste
1/2 cup plus 2 tbsp. sugar
1 tsp. vanilla
1 tsp. grated lemon zest
3 medium eggs
1 cup cake flour
2-1/2 tsp. baking powder
Grease and flour springform pan, 10 inches. Heat oven to 360°.
Cream almond paste, butter. Add sugar and spices. Add eggs, one at a time, beating until well blended. Add flour mixed with baking powder - be careful, don't stir too much. Blend well, but on low speed. Spread batter in pan and put rhubarb in dough - vertical so you get a nice pattern of circles. Bake about 45 minutes and cool on rack.
Dust with powered sugar if desired.
