Rhubarb Upsidedown Cake
rhubarb, cleaned and cut in 1 inch pieces
1 (3oz.) package strawberry Jello
3/4 cup sugar
1 package yellow cake mix
Layer rhubarb, tightly spaced, in bottom of a greased 9x13 pan (metal preferred).
Mix Jell-o and sugar, and sprinkle over rhubarb. Prepare cake mix as directed on package, and pour over rhubarb. Bake at the temp. directed on cake mix package, but for 45 minutes to 1 hour. Cake will test as done.
In 15 minutes, invert onto plate or cookie sheet. Serve with whipped topping.
Note: Up to 1 cup of sugar may be mixed with jell-o, and 1 cup of mini marshmallows may be added to ingredients layered in bottom of the pan.
