Strawberry Bread with Cream Cheese Spread

3 cups flour
2 cups sugar
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
2 (10 oz.) pkgs. frozen strawberries in syrup, thawed
1 cup reserved strawberry juice/syrup
1 cup oil
4 eggs, well beaten


Preheat oven to 350 degrees F.

Combine all dry ingredients and mix well. Make a well in center of mixture and pour all liquid ingredients into it. Mix by hand.

Grease and flour two 8"X4" loaf pans. Pour mixture into pans and bake at 350 degrees for 1 hr or until center tests clean. Can be frozen. Slice thinly before completely thawed.


Cream Cheese Spread: Combine one (8 oz.) pkg. softened cream cheese with enough reserved strawberry juice to make a spreadable mixture. Cut bread very thinly and spread with cream cheese mixture to make 'sandwiches'. Refrigerate until served. Cut into diagonals if desired.

Note: (1 pkg. of cream cheese will spread one loaf)
