No-Bake Strawberry Bottom Cheesecake

1 Keebler Ready Crust Graham Cracker pie crust
4 ounces cream cheese -- softened
1/4 cup sugar
1/2 cup sour cream
1 teaspoon vanilla
4 ounces Cool Whip
1 pint fresh strawberries -- thinly sliced
1 cup strawberry glaze
Slice strawberries and place on paper towels to drain.
Beat cream cheese until smooth. Gradually beat in sugar. Blend in sour cream and vanilla. Fold in whipped topping, blending well.
Spread thin layer of glaze over bottom of crust. Place strawberry slices on glaze and cover with another thin layer of glaze.
Gently spoon cream cheese mixture over glazed berries in crust. Cover with inverted dome (comes with prepared crust) and chill until set, at least 4 hours. Store leftover pie in refrigerator.
NOTES : Variation: For a plain no-bake cheesecake, omit strawberries and glaze. Double the amount of all the other ingredients. Chill at least 4 hours.

Strawberry Glaze

1 cup sugar
1 cup hot water
2 tablespoons lemon juice
3 tablespoons cornstarch
Combine and cook over medium heat until thick. Remove from heat and stir in 3 tablespoons strawberry gelatin mix (dry). Allow to cool and can add some smashed berries, if desired.
This is good for cheesecake topping and strawberry pies.
