Strawberry Pie
Topping:
2 lb strawberries, divided
1/2 c water
1 c sugar
3 tbsp corn starch
Filling:
1 1/4 c whipping cream
1/4 lb cream cheese, softened
3/4 tsp vanilla
1/2 c confectioner's sugar
Baked pie crust
Mash enough strawberries to make 1 cup. Put mashed berries in a saucepan with water.
Mix sugar and corn starch together, then add to berry/water mixture in pan. Bring to a boil and boil 1 minute until clear and thickened. Set aside to cool.
While that cools, whip cream until it is stiff.
In another bowl, beat together cream cheese, vanilla and confectioner's sugar, then carefully fold whipped cream into cream cheese mixture. Spread mixture in cooled baked pie shell and refrigerate.
Clean remaining strawberries and cut in half. Place, cut side down, on chilled cream cheese filling.
Cover with berry halves.
Cover all with reserved cooled crushed berry mixture.
Refrigerate.
