Strawberry Ribbon Pie
1 9" baked pie crust
1 3 oz package strawberry flavored gelatin
1/4 cp sugar
1 1/4 cp boiling water
1 10 oz package frozen strawberries
1 Tblsp lemon juice
1 3 oz package cream cheese, softened
1/3 cp powdered sugar
1 tspvanilla extract
1/8 tsp salt
1 cp heavy cream
whole berries for garnish (optional)
In medium bowl, stir gelatin and sugar with boiling water until gelatin and sugar are
dissolved; add frozen berries and lemon juice. Stir until berries are thawed. Cover and
refrigerate, stirring frequently, until mixture thickens.
In small bowl with wire whisk, mix cream cheese with powdered sugar, vanilla extract and
salt until smooth.
In another small bowl beat heavy cream into soft peaks; then gradually fold cream cheese
mixture into cream.
Spread half to the whipped cream mixture in the prpared pel\iecrust then spoon half of
berry mixture over it. Repeat with rest of cream mixture and berries. Refrigerate until set
then garnish with whole berries and/or whipped cream.
