Frozen Strawberry Souffle
4 cups fresh or frozen strawberries, thawed
1/2 cup sugar
2 egg whites
1/2 cup sugar
Puree strawberries and sugar in a blender or food processor.
In a large bowl beat egg whites with 1/2 cup sugar until stiff but not dry. Fold in strawberries and whip until double in volume (about 10 minutes).
Pour into large glass serving bowl (holds at least 12 cups) and freeze 24 hours. Serve frozen.
