Strawberry Jam
MCP pectin

Frozen strawberries with sugar (omit 3/4 cup sugar) or frozen fruit without sugar or fresh fruit

Crush each berry to a pulp and measure 5 3/4 cups. Add 1/4 cup lemon juice. Add one package of MCP pectin to the kettle with berries and juice.

To make jam: Place kettle over high heat; bring to a boil, stirring constantly to avoid scorching. Add sugar (8 1/2 cups of sugar for unsweetened berries) (7 3/4 cups sugar for sweetened berries) Mix the sugar in well and continue stirring. Bring to a full rolling boil (a boil that cannot be stirred down). Boil hard exactly 4 minutes. Remove from heat.
Jar and seal.
