Strawberry Truffle Pie
1 (6-ounce) package semisweet chocolate pieces (1 cup)
1 tablespoon butter or margarine
1 (8-ounce) package cream cheese, cubed and softened
2 tablespoons orange liqueur or orange juice
1/4 cup powdered sugar
1 (9-inch) baked pie crust
1 pound whole strawberries, rinsed & stems removed
1/4 cup red currant jelly
1/2 cup whipping cream
2 tablespoons sifted powdered sugar
1/2 teaspoon finely shredded orange peel
In saucepan, combine chocolate and butter.
Heat and stir over medium low heat till melted.
Add cream cheese and liqueur; heat and stir till blended.
Remove from heat.
Stir in 1/4 cup powdered sugar.
Spread mixture in bottom of baked piecrust.
Arrange berries, stem ends down in chocolate.
Cover and chill 4 hours.
Let stand at room temperature for 30 minutes before serving.
Beat cream with remaining powdered sugar and beat to soft peaks and dollop over pie.
Serves 8
