Sweet and Hot Peach Salsa

1 (32 oz) can diced peaches -- drained
1 (7 oz) jar roasted red peppers -- drained and diced
1/2 cup orange juice
1 tablespoon lime juice
1 tablespoon molasses
1 tablespoon crushed red pepper flakes
salt and ground black pepper
4 tablespoons minced fresh parsley*
In a large bowl, stir together peaches, roasted peppers, orange juice, lime juice, molasses, pepper flakes, salt and pepper.
Cover and let flavors mingle at room tmp. 1-2 hours; stir in parsley before serving.
Cover and chill if made ahead; remove from refrigerator about an hour before serving. Makes 2-1/2 cups
