Schweinegeschnetzeltes

1 pound (or slightly less) pork loin or veal, cut in strips
1 onion, sliced
1/4 cup each cream and white wine (use beef broth if you don’t want alcohol)
salt and pepper to taste
juice of half a lemon
1 tsp. butter + 2 tsp. oil
1 tbsp. flour (use more for a thicker sauce)
parsley and paprika for garnish


Heat oil/butter mix in pan. When hot add meat and fry about 3 minutes, until browned and almost cooked. Remove meat from pan.

Turn down heat a little and saute onion, 2 minutes or so. Add wine and cream, cook until reduced to half.

Stir together flour with 2 tbsp. water to make paste (you may need more water) and stir into sauce. Add meat, lemon juice, salt and pepper and simmer, covered, some more minutes.

Serve over potatoes or noodles or rice. Sprinkle with paprika and parsley.
