German Potato Salad
5 lbs. red potatoes
1 lb. bacon
1 onion, diced
1/3 c. flour
1/4 c. fresh parsley, chopped
1/2 c. water
1/2 c. cider vinegar
2 tbs. sugar
3/4 tsp. salt
pepper to taste
Preheat oven to 350.
Cook potatoes in boiling water 45 min. Peel and slice.
Fry bacon; reserve drippings. Saute onion in 2 tbs. bacon grease.
Add to potatoes with crumbled bacon and parsley. Mix.
Add flour to remaining bacon grease and stir well. Stir in remaining ingredients. When thickened, mix well with potato mixture.
Bake for 45 min.
