Vegetable: Oma's Red Cabbage

Oma’s Red Cabbage

2 tbl. oil
1 large sweet onion
1 medium to large head red cabbage, shredded
1 large apple, cubed
1 cup water
1/4 cup cider vinegar
1/4 cup sugar
1/2 tsp. salt
3 to 4 grinds black pepper
1/4 tsp. ground clove
1/2 cup chopped walnuts


Heat oil in a large heavy pot over medium heat. Add onions and saute until glassy. Add cabbage and apple; saute 5 minutes. Add remaining ingredients, except walnuts. Bring to a boil, reduce heat and simmer for 35 minutes or until tender. Top with walnuts when served.
