Categories: Meats, Irish
Yield: 4 Servings

4 Strip loins, 4-6 oz. each
4 tb Butter
2 tb Shallots or green onions, -finely chopped
1/2 lb Fresh mushrooms, sliced (opt)
1 c Whipping cream
1/2 c Irish whiskey
Salt
Freshly ground black peppercorns
Chopped parsley, for garnish

Melt butter in a large frying pan over medium heat. Add steaks, and saute quickly, turning once, about 1 1/2 minutes each side. Season with salt and pepper, and remove into a heatproof dish and keep warm.

Add chopped shallots or green onions and mushrooms, if using, to frying pan, and saute until tender, then add cream and Irish whiskey. Cook over medium heat until sauce is reduced by half. Pour sauce over steaks, sprinkle with chopped parsley, and serve at once.
