Colcannon (from "Mother Ireland" - Herself)

1 1/2 Lbs Potatoes (pared and cut into 2 inch chunks)
Salt as needed.
1/2 Med Cabbage (cored and chopped or shredded)
3 Med Green Onions, along with 2 inches of the Green (chopped)
Water As Needed.
1/2 Cup Milk, or as needed
2 Tbs Butter (or margarine)
1/4 tsp Nutmeg.
Salt and Pepper to Taste


Place potatoes in large sauce pan, cover with about 2 inches cold water. Add 1/2 Tsp salt, bring to a boil, let boil for 5 minutes. Add all of the cabbage, boil for 10 - 15 minutes more, or until the potatoes are tender.

Meanwhile, place chopped green onions into a sieve.

Steep in the boiling potato water for 3 - 5 minutes, drain and set aside.

Drain potatoes and cabbage.

Add the butter, onions, nutmeg, salt and pepper to the potatoes and cabbage. Coarsely mash on low speed with hand held mixer. Increase speed to high and gradually add the milk. Continue to whip, adding milk a little at a time until at the consistancy of regular mashed potatoes.
