Biscuit Tortoni

1/2 cup ground and toasted almonds
2 cups heavy whipping cream, divided
1 or 2 drops cinnamon oil
1/3 cup confectioners sugar
3 T dark rum
cherries for garnish on top


Mix 1/4 cup of ground almonds, confectioners sugar, 3/4 cup of cream and rum.

Whip the remaining cream with oil of cinnamon until stiff peaked. Fold both mixtures together gently and spoon mixture into paper cups or plastic cups or small cupcake liners, pretty glasses that can withstand the freezer or however you want to serve this. If you use cupcake paper liners then make sure they are in the cupcake pans. Make mini ones too. Put in freezer. After one hour you can top with cherry and if you want you can sprinkle with more ground almonds or pistachios or whatever. Return to freezer until very firm and ready to serve.

In place of ground almonds you can use pistachios, walnuts, ground almaretto cookies or whatever you want to use

You can use any flavor you want. You can make this in layers and have different flavors. Such as a layer of banana flavored tortoni, pineapple tortoni, strawberry tortoni etc. and in between the thin layers you can add chopped pistachios, sliced bananas, raspberries, blueberries etc.

To make layers make sure you line the bread loaf pans with parchment paper that is sprayed well and let it overlap. Fill and freeze. You make several layers this way, then assemble. When you take out of freezer then you need to let it thaw a few minutes before cutting.
