Italian Beef Roll Ups

1 (9 oz) pkg Green Giant harvest fresh frozen cut broccoli
1 3/4 cup water
3 T butter
2 Cups instant potato flakes
3/4 cup milk
1 oz (1/4 c) shredded fresh Parmesean cheese
8 1/4 inch thick slices cooked roast beef (from deli)
1 (12 oz) jar homestyle beef gravy
1 (14.5 oz) can diced tomatoes with garlic,oregano and basil, undrained
2 T chopped fresh parsley
2 T shredded fresh Parmesan cheese


Heat oven to 375. Spray a 13x9 inch baking dish with nonstick spray. Cook broccoli as the package says. Drain.

In medium saucepan, bring water and butter to boil. Remove from heat. Stir in potato flakes and milk; mix well. Stir in 1/4 cup Parmesean cheese and cooked broccoli.

Spread about 1/2 cup potato mixture on each beef slice; roll up. Place beef rolls; seam side down, in baking dish.

In medium bowl, combine gravy and tomatoes and mix well. Spoon over beef rolls in dish and cover with foil.

Bake at 375 for 25 minutes. UNcover and bake an additional 5 to 10 minutes or until bubbly. Sprinkle with parsely and 2 T parmesean cheese.
