posted by Ivanka 06-15-98 1:44 PM Orzo with Sun-Dried Tomatoes 1 pkg.(16 oz) orzo (rice shaped pasta) 3 green onions, chopped 1/2 c. drained oil-packed sun-dried tomatoes,coarsely chopped 1 T. oil from tomatoes 2 T. red wine vinegar 2 t. Dijon mustard 1 t. salt 1/4 t.ground black pepper 1/2 c. loosely packed fresh basil leaves, cut into thin strips Prepare orzo in boiling salted water according to package directions. Meanwhile, combine green onions, tomatoes, 1 T. oil from tomatoes, vinegar, mustard, salt, and pepper. Drain orzo. Add warm orzo to tomato mixture, stirring to coat. Let orzo mixture cool slightly, then stir in basil. Serve as an accompaniment to grilled meat, poultry or fish. Makes about 6 servings.
