Light Italian Noodle Casserole

8 oz. lean ground beef or ground turkey
1/2 cup chopped onion
1/2 cup chopped green pepper
1 3/4 cups (15 oz can) chunky style tomato sauce
2 tsp. Italian seasoning
1/4 cup fat free Parmesan cheese
1/2 cup sliced mushrooms, optional
2 cups hot cooked noodles, rinsed and drained
1/3 cup reduced fat mozzarella cheese


Preheat oven to 350° F. and spray 8x8 baking dish with olive oil flavored cooking spray.

In large skillet brown meat, onion and green pepper. Stir in tomato sauce, Italian seasoning and parmesan. Add mushrooms, if desired, and noodles. Mix well to combine.

Pour into prepared dish. Sprinkle mozzarella on top and bake for 30 minutes. Let cool 5 minutes before serving. Makes 4 servings. Freezes well.
