Homemade Pesto
2 cloves of garlic, crushed
50 g (2 oz) fresh basil leaves
100 g (4 oz) pine nuts
100 ml (4 fl oz) virgin olive oil
50 g (2 oz) fresh Parmesan cheese, grated
Salt and black pepper
5 ml (1 tsp) lemon juice
45 ml (3 tbsp) single cream
350 g (12 oz) dried pasta
Place garlic, basil and pine nuts in a food processor and blend until very finely chopped. Keeping the blender running on a low speed, drizzle in the olive oil
Stir cheese, seasoning, lemon juice and cream into the sauce.
Toss with cooked pasta and heat through for 2 to 3 minutes.
Serves 4
