Polenta

3/4 cup polenta or yellow cornmeal
2-1/4 cups water
1 tsp. salt


Put all the ingredients in a microwaveable container - 1-1/2 qt is a good size. Mix it all together. Put it in the microwave with some plastic wrap on top. Micro on HIGH for 3 minutes. Take it out and mix it together again.

Then put it back in and micro on HIGH again for 3 minutes. Take it out, mix it and let it sit, plastic wrap and all.

When ready to serve, take the plastic off (not facing you) and plate. Serve with some parmesan cheese, or some butter and salt and pepper.

If you want it to harden, put it aside without the plastic on top. Let it cool. Place in refrigerator for awhile. To grill, take it out of the refrigerator. Cut in slices and pan fry or pan-grill until brown on one side. Then turn over and grill or fry on the other side until brown. Serve with fish, or chicken or any type of stew - chili is great on top.
