Polenta with Caramelized Onions

3 cups water
1/2 tsp salt
1 cup yellow cornmeal
1 tsp olive oil
2 large onions -- sliced/in rings
8 oz fresh button mushrooms -- sliced*
4 cloves garlic -- minced
2 tbsp balsamic vinegar
fresh parsley -- chopped
Variation:

1 tsp dried oregano
1 tsp dried basil
1 tbsp parmesan cheese


My change to recipe: Place the cornmeal and salt in a microwaveable container. Pour the 3 cups of water over it and whisk to make smooth. Put in the microwave and cook on HI for 3 minutes. Take out and whisk until no lumps are left. Then put back in the microwave and cook for another 3 minutes. Take out, whisk, and set aside.

Original recipe: In a medium nonstick skillet, heat oil over medium heat. Add onions and remaining 1/4 cup of water. Cook, stirring, until onions become very tender, about 10 minutes. Stir in mushrooms and garlic. Continue cooking until onions and mushrooms begin to brown. Stir vinegar into onion mixture. To serve, spoon polenta onto plates and top with onion mixture. Garnish with parsley.

Serving Ideas : salad with Caesar dressing

Variation: Let polenta sit for 1 hour in refrigerator. Then take it out and cut it into shapes with a biscuit cutter. Fry them in a little oil until crisp on the outside. Plate and top with onion mixture.
