New Jersey Italian Hot Dog

1 loaf good Italian Bread, cut into 4 pieces
4 good quality hot dogs, such as Thumans
4 medium sized potatoes, peeled and diced
1 green or red pepper, seeded and diced
1 small onion, peeled and diced
4 tablespoons olive oil
salt and pepper, to taste


Par boil the potatoes, pepper and onion in water until almost soft and drain well.

Heat 3 tablespoons oil in frying pan and saute potato mixture until brown. Season with salt and pepper to taste. Meanwhile, heat remaining tablespoon of oil in another pan and fry hot dogs. When hot dogs are cooked, place in Italian bread and top with potato mixture. You can jazz up this "sandwich" by adding chopped garlic and/or red pepper flakes to the potatoes.

This recipe was supposedly "invented" in Newark, New Jersey in the 1930's or 1940's.
