Pesto
1 1/2 cups fresh basil
1/2 cup walnuts
1/2 cup freshly grated Parmigiano-Reggiano cheese
Juice of 1 lemon
Salt & pepper to taste
Approx. 1/2 cup extra virgin olive oil
Place basil, walnuts, cheese, lemon, salt & pepper in food processor and turn on.
Drizzle in oil slowly, so it emulsifies.
Process until mixture starts to come away from sides of bowl and all ingredients are well combined.
