Tomato Fresh Basil Soup

Even on a hot day.. serve it chilled with grilled bread drizzled with olive oil. Or serve it hot.

1 T olive oil, extra virgin
2 T butter
1 med onion, chopped
2 lbs ripe tomatoes, plum tomatoes, roughly chopped
1 clove garlic, minced
3 C. chicken broth (or vegetable)
1/2 c white wine
2 T sun dried tomato paste
2 T shredded basil
2/3 cup heavy cream
Salt and Pepper


Heat oil and butter in large saucepan. Add onion and sweat for 5 minutes til tender but not
browned. Add tomatoes, garlic, stock, white wine, tomato paste, salt and pepper to taste. Bring to
boil and simmer gently for 25 minutes. Stir occasionally so it doesn't stick.

Add basil and take off heat. With a hand blender or blender or food processor, process to puree.
Press through sieve.

Add cream and heat through, do not boil. Add more stock if too thick, bring back to temp. Add more chopped basil for garnish and season to taste. Pour into heated bowls, serve with crusty bread.
