Spaghetti Sauce

1 (28 oz) tin Roma Tomatoes
1 (5 oz) tin Tomato Paste
olive oil
1 medium Onion - minced finely
2 large cloves of Garlic - crushed
fresh mushrooms - quartered or sliced
1-2 Red Peppers - cut in chunks
1 Green Pepper - cut in chunks
1 T fresh lemon juice
1/4 Cup sugar
salt & pepper to taste
hot pepper flakes to taste


Heat oil and when not too hot add garlic and onion and stir until tender. Add tin of tomatoes and tomato paste. Stir. Add all other ingredients and let simmer on a low heat for 1 hour minimum. Along the way, flatten out tomatoes (they will get bloated up) but watch that you don't squirt yourself cause it can be hot.

Adjust sugar and lemon juice and if you add the hot pepper flakes, make sure you only add a few. They really are HOT.

If you prefer your vegetables a bit firmer, then add then to the sauce about 1/2 hr before you plan on eating.
