Tira Mi Su (Pick me UP)
(Tiramisu comes from Milan)
2 eggs
generous 1/4 cup sugar
2 TBLSP rum
1 package mascarpone cheese (see note below)
Combine eggs and sugar and rum on top of a double broiler.
Whisk over gentle simmering water until custard forms.
Remove from water and cool to room temperature in fridge.
When cold, fold into the marscapone cheese.
For Base:
3/4 cup very strong coffee
1/4 cup Kahlua or Tia Maria
2 packages of lady fingers or Stello D'Oro Margherite cookies
cocoa (unsweetened)
grated semisweet chocolate
Mix coffee and Kahlua. Dip lady finger or cookies in coffee mixture and place in a single layer in a pan or fancy dish. (if you use ladyfinger, dip quickly as they absorb quickly and the Tiramisu can get runny).
Spread half the cream mixture over the top of the cookies or ladyfingers. Sprinkle with grated chocolate. Repeat layers again. Sprinkle with Grated chocolate.
Refrigerate overnight and just before serving sprinkle with cocoa. (He says don't sprinkle cocoa before it gets a little bitter this way.
Always make at least 24 hours ahead.
Carl is from Italy. He personally doesn't like American marscapone cheese. He thinks the following recipe substitute is better than any you can buy and closer to the real Italian Marscapone cheese.
1 (8 oz) pkg cream cheese (reg not low fat)
1/4 cup heavy whipping cream
2 1/2 TBSP sour cream (not low fat or fat free)
Beat with mixer until smooth and creamy
