Patate All'Italiana (Potatoes Italian Style)
Serves 6

8 average size potatoes
2 oz (1/2 stick) butter
4 slices crustless bread ( cut in 1” squares), soaked in 2 fl oz milk
5 fl oz (1/2 cup) milk or cream
3 eggs, separated
1 oz butter, melted
1 oz Parmesan cheese, grated
salt, pepper and nutmeg


Preheat oven to 200° C (400° F.)

Wash, peel and roughly slice the potatoes and boil in salted water for 30 minutes or so until cooked. Drain well and mash them and then add the butter, bread, milk and egg yolks. Mix well and season with salt, pepper and nutmeg.

Whisk the egg whites until stiff and fold them into the potato mixture. Pile high in a baking dish and sprinkle with the melted butter and Parmesan cheese

Bake at 200°C (400°F) (or hotter) for 15 to 20 minutes or until golden.
