Strawberry - Banana Jam

2 quarts fully ripe strawberries
3 ripe medium bananas
3 tablespoons fresh lemon juice
6 3/4 cups granulated sugar
1 box fruit pectin
1/2 teaspoon butter or margarine


Stem and thoroughly crush strawberries, one layer at a time. Measure 3-1/4 cups into 6-or-8-quart saucepot.

Mash bananas thoroughly. Measure 1-1/2 cups into saucepot. Stir in lemon juice.

Measure sugar into separate bowl. (Scrape excess sugar from cup with spatula to level for exact measure.)

Stir pectin into fruit in saucepot. Add butter. Bring to full rolling boil on high heat, stirring constantly. Quickly, stir in sugar. Return to full rolling boil and boil 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into hot sterile canning jars, filling to within 1/4-inch of tops. Wipe jar rims and threads. Cover with pretreated lids and screwbands.

Place on a rack in a canner filled with boiling water. Boiling water should cover the jars by 1 to 2 inches. Cover the canner. Begin timing as soon as all the jars are in the canner and time for 5 minutes. Remove jars.

After jars are cool, check seals.

Yield: About eight 1-cup jars
