1 1/2 cups champagne
1 1/2 cups orange juice
3 1/2 cups granulated sugar
1/2 teaspoon butter
1 pouch liquid fruit pectin


Measure champagne and orange juice into 6-or-8-quart saucepot. Measure sugar into separate bowl. (Scrape excess sugar from cup with spatula to level for exact measure.) Mix sugar thoroughly into juice in saucepot. Add butter. Bring mixture to full rolling boil on high heat, stirring constantly. Quickly stir in fruit pectin. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into hot sterile canning jars, filling to within 1/4-inch of tops. Wipe rims and threads.

Cover with pretreated lids and screwbands. Place on a rack in a canner filled with boiling water. Boiling water should cover the jars by 1 to 2 inches. Cover the canner. Begin timing as soon as all the jars are in the canner and time for 5 minutes. Remove jars. After the jars are cool, check seals.

Yield: Four 1- cup jars
