Dessert: Macaroons

Macaroons
Yield: 40 servings

1 Egg, separated
1 c Shredded coconut (unsweetened)
1 c Artificial sweetener
1/2 c Chopped pecans (optional)
2 c Cornflakes
1/2 ts Almond extract


Beat egg white until stiff but not dry. Fold in sweetener equivalent to 1 cup sugar. Add remaining ingredients. Drop by teaspoonfulls onto greased baking sheet. Bake 350F for 12 minutes. Remove from pan at once. Makes about 3 1/2 dozen cookies, each cookie is 1/2 fat. 24 calories.
