Matzo Farfel Casserole

2 c Matzo Farfel, boiled for a few minutes until soft and drained well
1 large eggplant, peeled and cubed
2 large onions, thinly sliced
1 green pepper, diced
1 can Manishewitz tomato and mushroom sauce
2 (8 oz) cans tomato sauce
1 lb. cream cheese, cubed (optional)
salt, pepper, oregano, to taste
2 T peanut oil


In large saucepan, saute onion in oil; add eggplant, green pepper, tomato sauces. Cover and simmer for about 15 minutes. Season with salt, pepper, and oregano.

Grease a 3 quart casserole; starting with the vegetable mixture, place a layer on the bottom, add a layer of cream cheese, then a layer of cooked farfel. Repeat layers, ending with the vegetable sauce. Bake at 350 for about 30 minutes.

* zucchini can be substituted for the eggplant, if preferred.
