Matzo Farfel Kugel
1 cup chopped onion
1 cup chopped celery
1 cup chopped red pepper
1/4 cup chicken fat (or oil)
3 1/2 cup farfel
1 t salt
1/4 t pepper
1 t paprika
2 eggs, slightly beaten
1 cup chicken broth
1 1/2 cup boiling water
Saute celery, onions and peppers in a bit of fat until tender.
Combine beaten eggs with remaining chicken fat and add seasonings. Stir in boiling water.
Add farfel to sauted vegetables.
Pour in combined liquids. Let stand for 10 minutes. Turn into a greased baking dish and bake for 30 minutes @ 350*F.
