Matzo Balls
from an old New York Times recipe

4 eggs
1/2 cup seltzer or club soda
1 cup matzo meal plus 1 or 2 TBS
1/3 C. vegetable oil (works just as well as chicken fat)
1 tsp salt
pepper


Beat eggs, add seltzer, oil S&P and stir. Chill 3 hours. Roll into balls about the size of a walnut and simmer 45 minutes, covered - don't lift lid. When cool, drop into room temperature soup and simmer a few minutes. You can even make these ahead and freeze them!
