Matzo Balls
4 eggs
1/3 c skimmed chicken fat
1 c matzo meal
1/2 c chicken broth
1 t salt
1/4 t black pepper
Beat eggs; add chicken fat, matzo meal, chicken broth, salt and black pepper; mix well. Chill one hour. Form into balls with wet hands and drop into soup; simmer 20 minutes. Makes about 16 matzo balls.
Intended for 3 qt soup.
