Mushroom Matzo Pie (Passover)

4 pieces matzo
water
1 1/2 tsp. vegetable oil
1 large onion -- chopped
2 cloves garlic -- sliced thinly
3 cups mushrooms -- thinly sliced
1 yellow bell pepper -- thinly sliced
salt and pepper -- to taste
Optional (if religious or not): 1/2 cup Parmesan cheese -- freshly grated*


Preheat oven to 400 degrees.

Place matzo in a pie pan or something shallow. Pour some water over it and let it sit for a moment or so until a bit soft. Then squeeze out as much of the water as you can. It doesn't matter if the matzo gets all crumbly.

Heat a nonstick skillet over medium-high heat. Add the onion and garlic and saute until a bit soft. Add the sliced pepper and saute until soft. Add the mushrooms and continue to cook until they are tender and have released all their juices, about 5 minutes. Sprinkle with salt and pepper.

Spray a pie plate with some nonstick spray or a bit of vegetable oil. Place the crumbled matzo in the plate and spread it out so it fills the whole pan. Make sure there are no holes. Sprinkle with a touch of salt and pepper. Cover the matzo layer with the mushroom mixture. Spread it out so it covers the whole thing. Sprinkle with the Parmesan if you can use it.

Preheat the oven to 400°F. When hot, place pan in oven and cook for 25 minutes. When done, let it sit for 10 minutes. Serve.
