posted by Casha 05-26-98 2:04 PM Cranberry Fruit Leather 2 cups fresh or frozen cranberries (pureed) 1 cup peaches or other fresh fruit (pureed) 1/4 cup sugar Combine pureed fruits and sugar in a bowl.Pour mixture 1/8" deep in a lightly greased pan (2-8" round or square pans) Place in oven on low heat.100-200 degreeF The oven door should remain slightly ajar to permit moisture to escape. The leather is ready when it can be lifted from pan in one thin solid layer (usually 2 1/2 to 3 hours) Roll up and slice into 1/2 " to 3/4"wide pieces. Serve plain or on toothpicks with dips. Whipped Cream Dip: Whip 1 cup heavy cream with 1/4 cup powdered sugar. Cream Cheese dip: Whip 1 8 oz pkg. softened cream cheese with 3 tablespoons of powdered sugar Variation: Make pinwheels. Spread dip over leather before cutting. Roll. Freeze. Cut into 1/2" to 3/4" slices.Sprinkle with powdered sugar. Makes 24 pinwheels..
