Katie Belle Cake

8 ozs white vegetable shortening
7 ozs vanilla flavoured mini-marshmallows
6 cups Rice Krispies
1 1/2 cups coconut milk powder
1/2 cup confectioners sugar
7 ozs raspberry marshmallows, quartered


Place white vegetable shortening and vanilla marshmallows in a heat-proof bowl and melt, stirring occasionally, over gently simmering water until both shortening and marshmallows are just melted. (This mixture will not blend together)

Place Rice Krispies, coconut milk powder, confectioners sugar and raspberry marshmallows in a bowl. Add melted mixture and stir to combine.

Line a deep 8" round cake pan with baking paper. Spoon mixture into cake pan. Shape to look like a rounded, risen cake.

Place in refrigerator to set.

Decorate cake as desired and store loosely with plastic food wrap in refrigerator.
