Posted by Toni 2 on April 11, 1998 at 08:16:57: Padysaurus Pizza Pockets 3 to 3 1/4 c all purpose flour 1 pkg (1/4 oz) active dry yeast 1 TBL sugar 1 tsp salt 1 c warm water (120-130 degrees) 1 TBL butter OR margarine, melted 1 can (8 oz) pizza sauce 12 slices pepperoni 1 pkg (2 1/2 oz) thinly sliced fully cooked pastrami, chopped 1 pkg (2 1/2 oz) thinly sliced fully cooked ham, chopped 3/4 c shredded mozzarella cheese 1 egg, beaten In a mixing bowl, combine 2 1/4 c flour, yeast, sugar and salt. Add water and butter, mix well. Add enough remaining flour to form a soft dough. Turn onto a floured surface; knead for 4 min. Roll dough into a 14x10 in rectangle. Cut with a 3 in round cookie cutter. Reroll scraps to cut a total of 24 circles. Place 1 tsp pizza sauce and a slice of pepperoni in the center of 12 circles Combine pastrami, ham and cheese place equal amounts over pepperoni. Top with 1/2 tsp pizza sauce if desired. Cover with remaining dough circles Pinch edges to seal. Place on greased baking sheets. Brush with egg. Bake at 400 degrees for 20-25 min or until browned. Yield: 12 servings
