Spicy Black Beans and Tomatoes

Vegetable cooking spray
1 teaspoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
2 (14.5 ounce) cans no salt added whole tomatoes, drained and chopped
2 tablespoons canned chopped green chiles
2 (15 ounce) cans black beans, rinsed and drained
1 tablespoon chopped fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon ground red pepper
1/4 teaspoon chili powder


Coat a large nonstick skillet with cooking spray; and the olive oil. Place over medium heat until hot. Add the chopped onion and garlic; saute until tender. Add the tomatoes and chiles; reduce the heat and cook, uncovered, 6 to 8 minutes or until slightly thickened, stirring occasionally. Stir in the beans and remaining ingredients. Cover and cook 5 minutes or until thoroughly heated.
