Baked French Toast

French Toast Baked

2/3 cup low-fat (1% milk-fat) cottage cheese
1/4 cup skim milk
2 tablespoons sugar
1 large egg
1 large egg white
1/2 teaspoon vanilla
4 medium thick (1 oz each) slices of whole-wheat, oatmeal, or other whole-grain bread


In a food processor or blender, whirl cottage cheese, milk, sugar, egg, egg white and vanilla for about 1 minute or until smooth.

Transfer mixture to a shallow dish and place the bread in the cottage cheese mixture and place in fridge overnight.

Next morning preheat oven to 425°

Warm a greased baking sheet and place soaked bread on it. Bake for 6 minutes flip and bake for another 6 minutes.
