2-3 small zucchini, sliced 1/4 in. thick
olive oil
2-3 cloves of garlic, crushed
salt and fresh ground pepper
Heat olive oil in non-stick frypan on medium high. Add sliced zucchini
and brown lightly. Add garlic, salt and lots of fresh pepper and reduce
heat to medium (so not to burn garlic). Stir to coat squash with oil and
seasonings, taking
care not to break up the squash. Add a little water and cover. Cook until desired tenderness.
