Baked Hush Puppies

1/2 cup yellow cornmeal
1/2 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon red pepper
1 egg, beaten
1/3 cup evaporated skimmed milk
1/4 cup thinly sliced green onions
2 tablespoons vegetable oil
Vegetable Cooking Spray


Preheat oven to 425 degrees F. Combine first 6 ingredients in a medium bowl; make a well in center of mixture. Combine egg, milk, green onions, and oil; add to dry ingredients, stirring just until moistened.

Spoon about 1 tablespoon batter into miniature (1 1/2 inch) muffin pans coated with cooking spray. Bake at 425 degrees for 15 to 20 minutes or until lightly browned. Remove from pans immediately.

Yield 1 1/2 dozen (51 calories per hush puppy) 1.4 grams protein, 2.1 gram fat, 6.4 grams carbohydrate, 15 milligrams cholesterol, 100 milligrams sodium and 33 milligrams calcium

Easy Hush Puppies

1/4 cup yellow cornmeal
1/4 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon celery flakes
1/8 teaspoon dried whole dill weed
1/8 teaspoon ground red pepper
1 egg white, beaten
2 tablespoons skim milk
2 teaspoons vegetable oil
2 tablespoons minced green onions
1 tablespoon minced fresh parsley
Vegetable cooking spray


Preheat oven to 425 degrees F. Place first 9 ingredients in a large bowl, stirring well to combine. Combine beaten egg white, milk, and oil in a small bowl, stirring well. Add liquid ingredients to dry ingredients, stirring just until blended. Gently stir in green onions and parsley.

Spoon 1 tablespoon batter into each of eight miniature (1 3/4-inch) muffin pans that have been coated with cooking spray. Bake at 425 degrees F for 15 to 20 minutes or until hush puppies are golden brown. Immediately remove hush puppies from muffin pans, and serve warm.
