Pritikin-Style Fruit Loaf

Makes about 12 slices

25 dried apricots
10 dried figs
10 dried prunes
5 dried pears, halved
2 cups water
1 large, or 2 small bananas, sliced
1 cup wholemeal (whole wheat) self-raising flour
1/2 cup almond meal
1/4 teaspoon of cinnamon (or up to 1/2 teaspoon)
1 teaspoon finely grated orange rind


Preheat oven to 180 degrees C (350 degrees F). Grease and flour a 20 cm (8 inch) loaf pan.

Place dried fruits into a saucepan with the water. Bring to the boil, cover, and simmer for 5 minutes. Remove 10 apricots from pan and blend these to a puree with the cooking liquid and the sliced banana. Place into a large mixing bowl.

Mix almond meal and wholemeal self-raising flour with the fruit puree and stir in all cooked fruits, cinnamon powder and grated orange rind. Spoon mixture into prepared cake pan and bake in oven for about 40 minutes. Allow to cool priot to unmoulding onto a wire rack.
