Broccoli and Tarragon Quiche

1 (16 oz.) container Egg Beaters or Second Nature egg substitute
1/4 tsp. cream of tartar
1/2 tsp. salt
1/2 tsp. fresh ground pepper
1/2 tsp. crushed tarragon
1/2 tsp. sweet basil
1/2 tsp. ground oregano
2 cups broccoli florets, chopped small
1 large tomato, peeled, seeded & chopped
4 oz. non-fat mozarella cheese, grated
4 oz. non-fat cheddar cheese, grated


Preheat oven to 375 degrees F.

Combine egg substitute, cream of tartar and spices in blender, process until frothy.

Coat a 1-1/2 quart souffle dish with non-stick cooking spray. Pour 1/2 of egg/spice mixture into the souffle dish. Layer the remaining ingredients as follows: 1/2 of the broccoli, tomato, mozarella, remaining broccoli, cheddar cheese. Pour remaining egg mixture over the layers.

Bake 30 minutes uncovered at 375 degrees or until it tests done in the center. Let stand 15 minutes before serving.
