Rice: Pineapple Rice

Pineapple Rice
Serves 2

1/2 cup uncooked brown rice, regular or quick-cooking
1 cup water
1 (4-ounce) can crushed pineapple in its own juice


If using regular brown rice, combine rice and water in medium saucepan. Bring to boil and lower heat to simmer. Cover with tight lid and simmer 35 minutes. Add pineapple and its juice, cover again and continue to cook over low heat about 10 or more minutes.

If using quick-cooking brown rice, combine all ingredients in saucepan and follow package cooking instructions.

To prepare in microwave, combine regular rice and water in deep 1 1/2-quart container and cover loosely. Cook on high (100 percent power) for 5 minutes, then reduce to medium (50 percent power) 25 minutes. Add pineapple and continue to cook on medium 10 minutes more. Fluff with a fork.

For quick-cooking rice, combine all ingredients and cook according to package microwave directions.
