Blue Cheese Dressing

1 (8-ounce) carton plain low-fat yogurt
3/4 cup nonfat buttermilk
2 ounces crumbled blue cheese -- (1/2 cup)
1 teaspoon cider vinegar
1/4 teaspoon freshly ground pepper
1/8 teaspoon salt
1 small clove garlic -- crushed
Spoon yogurt onto several layers of heavy-duty paper towels. Spread to 1/2-inch thickness. Cover with additional paper towels; let stand 5 minutes.
Scrape into a small bowl, using a rubber spatula. Add buttermilk and remaining ingredients; stir well. Cover and chill.
