BBQ'd Citrus Salmon
1 fish cutlet per person
salt and pepper to taste
Marinade:
Juice of 1 lime
Juice of 1 lemon
1 tablespoon chopped chives
2 cloves crushed garlic
1 tablespoon olive oil.
Place fish cutlets in a shallow (non aluminium) dish Combine marinade ingredients together and pour over fish. Refrigerate 2 hrs.
Bbq until cooked through, turning half way through cooking (around 2 mins each side on a med-high temp and an extra 5 mins each side on a med. temp). Time depends on the thickness of the cutlet and the temp. of the bbq.
