posted by bionicgal 06-22-98 7:51 AM Sugar Free Apple Pie 1/3 cup frozen apple juice concentrate 4 packets artifical sweetener (to equal 8 tsp. sugar) 2 tsp. cornstarch 1 tsp. ground cinnamon pastry for double-crust pie (9-inch) 8 cups thinly sliced peeled baking apples 1 tbl. margarine Combine the first 4 ingredients. Line a pie plate with bottom crust; add apples. Pour juice mixture over apples; dot with margarine. Roll out remaining pie crust to fit top of pie. Cut slits in top. Place over filling; seal and flute edges. Bake at 375 degrees for 35 minutes. Increase oven to 400 degrees; bake 15-20 minutes or until apples are tender. Diabetic exchange: 1 serving equals 3 fat, 2 fruit, 1 starch, also 337 cal., 233 mf sod, 0 chol, 45 gm carb, 2mg pro, 17 gm fat.
