Sweet Potato Fries with Horseradish Dressing

Sweet Potato French Fries:
Slice potatoes into size of fries you desire. Soak in cold water for 1/2 hour; drain well and pat dry with paper towel. Spray lightly with non stick spray or olive oil and mix well.

Spread out on tray and bake with convection set at 500 degrees for 10 minutes. Lower temp to 400 and bake for another 5 to 7 minutes depending on how thick you cut the potatoes. Make sure potato is cooked through, if necessary turn oven down and cook more, but if you make them the normal size of french fries this is enough. Very crisp and very low fat and very very good. You can make these as stick fries or medallions.

Horseradish Dip:
1/2 cup cottage cheese, small curd
1/2 c crumbled farmers cheese
1 T minced dill weed
2 T fresh horseradish
1/4 c chopped pimento


Put cottage cheese, farmers cheese, dill and horseradish in food processor, blend til smooth. Add chopped pimento. Refridgerate til cold. Serve with sweet potato fries.
